Ingredients

For the Sautéed Apples

  • 2 Apples of choice (we used Gala) peeled, cored, and chopped
  • 1/4 Cup AMARUMAYU Apple & Camu Camu Superfruit Juice
  • 2 Tablespoons Coconut Oil
  • 2 Tablespoons Pure Maple Syrup
  • 1/2 Teaspoon Cornstarch (to thicken) mixed with 1 teaspoon of water
  • 1/4 Teaspoon Ground Cinnamon

For the Oatmeal Mixture

  • 1 Cup + 2 Tablespoons Oat Milk
  • 1 1/4 Cup Quick-Cooking Rolled Oats
  • 1/2 Cup AMARUMAYU Apple & Camu Camu Superfruit Juice
  • 2 Tablespoons Chia Seeds
  • 2 Tablespoons Pure Maple Syrup
  • 1/2 Teaspoon Vanilla Extract
  • 1/4 Teaspoon Ground Cinnamon
  • A Pinch of Ground Nutmeg roughly 1/8 teaspoon
  • A Pinch of Salt roughly 1/8 teaspoon

Instructions

For the Sautéed Apples

  • In a medium saucepan, melt the coconut oil over medium heat. Once melted, add in the chopped apples, AMARUMAYU Apple & Camu Camu Superfruit Juice, pure maple syrup, and cinnamon.
  • After a few minutes, add in the cornstarch mixed with water and stir. Sautée the apples for 7-10 minutes until the apples are softened and golden and the liquid has reduced down and thickened. Stir occasionally. Then, set aside to cool.

For the Oatmeal Mixture

  • In a medium sized bowl, combine oat milk, oats, AMARUMAYU Apple & Camu Camu Superfruit Juice, chia seeds, maple syrup, vanilla, cinnamon, nutmeg, and salt.
  • In a pint size mason jar (or a similar type of container) start by adding a couple of spoonfuls of the sautéed apple mixture to the bottom of the jar, followed by a few spoonfuls of the oatmeal mixture. Add another layer of the apples to each jar, followed by the oatmeal mixture again.
  • Top the jar with the rest of the sautéed apples.
  • Put the lids on each jar and transfer into the refrigerator to let the oats and chia seeds soak overnight!
  • Enjoy! Feel free to add any extra toppings that you like such as nut butters or granola!
